MEET THE BAKER


My name is Torrey Wilhau, and I'm from Clarence, Iowa. I have 3 years of experience working in Michelin-reviewed establishments in Chicago, along with 2 years focused on the craft of sourdough baking. I began baking again as a hobby during the lockdown in 2020 and offered neighbors my extra loaves to avoid waste. Soon after, I began a bread subscription service by delivering sourdough by bike before ultimately deciding to return home and open a bakery in a historic building my family helped to restore.
